This 15-minute strawberry spinach salad combines fresh, vibrant ingredients like strawberries, blueberries, feta, and toasted pecans with a tangy balsamic dressing, making it a refreshing and nutritious dish.

Ingredients

1 cup balsamic vinegar

¼ cup honey or brown sugar

10 oz baby spinach, fresh

3 cups strawberries, cleaned and hulled, sliced

1 cup blueberries

⅓ cup feta cheese, crumbled

1 cup pecans, toasted (some chopped)

Instructions

  1. In a small saucepan, combine the balsamic vinegar and honey (or brown sugar). Bring to a simmer over medium heat and cook for about 5-7 minutes, or until the dressing has thickened slightly. Remove from heat and set aside to cool.
  2. While the dressing is cooling, heat a dry skillet over medium heat. Add the pecans and toast them for about 3-4 minutes, stirring occasionally, until they are lightly browned and fragrant. Let them cool before chopping some of them into smaller pieces.
  3. In a large bowl, combine the fresh spinach, sliced strawberries, blueberries, and crumbled feta cheese. Toss gently to mix the ingredients together.
  4. Drizzle the balsamic dressing over the salad and toss to coat evenly. Add the toasted pecans on top, either whole or chopped, for extra crunch.
  5. Serve immediately and enjoy this fresh, flavorful salad!

Notes

To make it a more filling meal, add grilled chicken, shrimp, or quinoa.

For a vegan version, omit the feta cheese or use plant-based cheese.

To make a sweeter dressing, add more honey or brown sugar.

Try walnuts, almonds, or candied pecans as alternatives to pecans.

Store leftovers in an airtight container in the fridge for 1-2 days. Keep the dressing separate to prevent the spinach from wilting.
