A quick and comforting single-serve blueberry crisp made in a mug with instant oatmeal, butter, and fresh or frozen blueberries. Ready in just 2 minutes, it’s the perfect warm and fruity treat when you’re craving dessert fast.

Ingredients

1/2 packet flavored instant oatmeal

1 tablespoon butter, melted

3/4 cup blueberries (fresh or frozen)

1/2 teaspoon cornstarch

Instructions

  1. Place the blueberries in a microwave-safe mug.
  2. Sprinkle the cornstarch over the blueberries and stir gently to coat.
  3. Mix the instant oatmeal with the melted butter until crumbly.
  4. Spoon the oatmeal mixture over the blueberries in the mug.
  5. Microwave on high for 90 seconds to 2 minutes, until the blueberries are bubbling and the topping is set.
  6. Allow to cool slightly before serving, as the filling will be hot.

Notes

Use flavored or plain instant oatmeal. If using plain, add sugar or cinnamon for flavor.

Frozen blueberries work well and do not need to be thawed.

Cornstarch helps thicken the juices, but can be skipped for a looser filling.

Swap blueberries with raspberries, strawberries, or diced apples for variety.

For a dairy-free option, replace butter with coconut oil or vegan butter.
