This refreshing 20-Minute Strawberry Cucumber Salad combines sweet strawberries, crisp cucumbers, and tangy feta cheese, all tossed in a vibrant homemade dressing of lemon, honey, olive oil, and herbs. Perfect for a light lunch or a side dish, it’s quick to prepare and bursting with fresh flavors and textures.

Ingredients

Salad

  • 2 cups chopped strawberries
  • 2 cups chopped cucumbers (preferably Persian or mini cucumbers for extra crunch)
  • 1/2 cup crumbled feta cheese
  • 5-10 leaves fresh basil, chopped (depending on size)
  • 5-10 leaves fresh mint, chopped (depending on size)
  • Salt and pepper, to taste

Dressing

  • 2 Tbsp olive oil
  • 1/2 a lemon, juice only
  • 1/2 tsp honey
  • 1/2 tsp white wine vinegar (or apple cider vinegar)
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Make the Dressing: Add olive oil, lemon juice, honey, white wine vinegar, garlic powder, salt, and pepper to a small bowl or jar. Whisk or shake thoroughly to combine and emulsify the dressing. Set aside for flavors to meld.
  2. Prepare the Salad: In a large serving bowl, combine the chopped strawberries, cucumbers, crumbled feta cheese, chopped basil, and chopped mint. Season lightly with salt and pepper.
  3. Toss and Serve: Drizzle the prepared dressing over the salad ingredients. Toss gently but thoroughly to ensure everything is coated evenly. Taste and adjust seasoning if necessary. Serve immediately to enjoy the crisp freshness.

Notes

  • Use Persian or mini cucumbers for added crunch and a more delicate flavor.
  • Adjust the amount of honey in the dressing depending on your preferred sweetness level.
  • Fresh herbs like basil and mint add brightness — don’t skip them if possible.
  • The salad is best served fresh to maintain the crisp textures; avoid letting it sit for too long.
  • For a vegan option, omit feta or substitute with a plant-based cheese alternative.
