Dragon Fruit Layer

  • 1 tablespoon agar agar powder (use up to 1.5 tbsp for firmer texture)
  • ½ cup water (to dissolve agar agar powder)
  • ⅓ cup sugar (adjust to taste)

Flavored Liquid Layer

  • 1 tablespoon agar agar powder (use up to 1.5 tbsp for firmer texture)
  • ½ cup water (to dissolve agar agar powder)
  • 1.5 cups liquid of choice (coconut water, rose water, jasmine tea, hibiscus, or orange blossom water)
  • ⅓ cup sugar

Instructions

  1. Prepare Coconut Milk Base: In a saucepan, whisk together ½ cup water and agar agar powder. Let it bloom for 5 minutes. Add coconut milk, sugar, and salt. Heat over medium heat, stirring constantly until the mixture reaches a gentle boil and the agar agar is fully dissolved, about 3–5 minutes. Pour into a mold or dish as the first layer. Allow it to cool slightly to begin setting.
  2. Make Dragon Fruit Purée: Peel the dragon fruit and blend it with 1.5 cups water until smooth, yielding about 1.5 cups of purée.
  3. Prepare Dragon Fruit Layer: In a saucepan, whisk ½ cup water and agar agar powder together and let it bloom for 5 minutes. Add the dragon fruit purée and sugar. Bring to a gentle boil while stirring until the agar agar is fully dissolved. Carefully pour this mixture over the slightly set coconut layer. Use the back of a spoon to gently spread to avoid breaking the base layer. Let this layer cool until just set.
  4. Prepare Flavored Liquid Layer: Again, in a saucepan, whisk ½ cup water and agar agar powder. Let bloom for 5 minutes. Add 1.5 cups of your chosen liquid (such as coconut water, rose water, jasmine tea, hibiscus, or orange blossom water) and sugar. Bring to a gentle boil while stirring until agar agar dissolves fully. Pour gently over the fruit layer.
  5. Set and Serve: Allow the layered jelly to cool to room temperature, then refrigerate until fully set, approximately 30 minutes to 1 hour. Once set, slice into squares or diamond shapes and serve chilled.
