Air fryer spiced and herbed skirt steak is a bold and flavorful dish made with fresh herbs, garlic, warm spices, and a tangy marinade. Cooked quickly in the air fryer, the steak turns out juicy and tender, making it perfect for weeknight dinners or entertaining.

Ingredients

3 cloves garlic, minced

1 cup fresh parsley leaves, finely chopped

3 tablespoons fresh mint leaves, finely chopped

1 tablespoon ground cumin

2 teaspoons smoked paprika

1 teaspoon cayenne pepper

1 teaspoon crushed red pepper flakes

Salt and ground black pepper, to taste

¾ cup olive oil

3 tablespoons red wine vinegar

2 skirt steaks (8 ounces each)

Non-stick cooking spray

Instructions

  1. In a bowl, mix garlic, parsley, mint, cumin, smoked paprika, cayenne, red pepper flakes, olive oil, and red wine vinegar. Season with salt and black pepper to taste.
  2. Pat skirt steaks dry, place in a dish or bag, and coat with marinade. Refrigerate for at least 1 hour or overnight.
  3. Preheat air fryer to 400°F (200°C) and lightly spray the basket with cooking spray.
  4. Remove steaks from marinade, letting excess drip off, and place in the air fryer basket in a single layer.
  5. Cook for 6–8 minutes, flipping halfway, until internal temperature reaches 130–135°F (medium-rare) or desired doneness.
  6. Rest steaks for 5 minutes before slicing against the grain. Garnish with extra herbs or drizzle with reserved marinade if desired.

Notes

Use flank steak or sirloin if skirt steak isn’t available.

Add lemon juice to the marinade for brightness.

Swap cayenne and red pepper flakes for milder spices if you prefer less heat.

Top with feta or blue cheese for richness.

Grill, pan-sear, or broil instead of using the air fryer if desired.
