This Almond Peach Bread Pudding combines the sweetness of ripe peaches, the crunch of almonds, and the richness of a creamy custard. Topped with sliced almonds, caramel sauce, and a scoop of vanilla ice cream, it’s a comforting and indulgent dessert perfect for any occasion.

Ingredients

For the Bread Pudding

1 (16 ounce) loaf baguette, torn into 1½-inch pieces (about 8 cups)

3 ripe peaches, diced

1 cup raw almonds, roughly chopped

1½ cups whole milk

1½ cups heavy cream

½ cup granulated sugar

¼ teaspoon sea salt

4 large eggs

½ cup sliced almonds

For Serving

½ cup caramel sauce (homemade or store-bought)

½ gallon vanilla ice cream (optional)

Instructions

For the Bread Pudding:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or cooking spray.

  2. Tear the baguette into 1½-inch pieces and place in the prepared baking dish.

  3. In a large bowl, whisk together the whole milk, heavy cream, sugar, sea salt, and eggs until smooth.

  4. Pour the milk and egg mixture over the torn bread pieces, ensuring all bread is soaked. Gently press down with a spoon and let sit for 10-15 minutes to fully absorb.

  5. Fold in diced peaches and chopped almonds.

  6. Sprinkle sliced almonds over the top for a crunchy finish.

  7. Bake for 45-50 minutes, or until golden brown on top and the custard has set (test with a knife— it should come out clean).

To Serve:

  1. Once baked, let the bread pudding cool for 10 minutes.

  2. Drizzle caramel sauce over the warm pudding or serve on the side.

  3. Optional: Add a scoop of vanilla ice cream to each serving for extra indulgence.

  4. Serve warm and enjoy!

Notes

You can substitute peaches with other fruits like nectarines, plums, or mixed berries.

Add a teaspoon of ground cinnamon or nutmeg to the custard mixture for extra warmth.

Use different nuts like walnuts or pecans for a fun twist.
