A creamy and nostalgic ambrosia fruit salad made with pineapple, mandarin oranges, marshmallows, coconut, and a whipped cream–sour cream base. Light, sweet, and refreshing, it’s perfect for holidays, potlucks, or family gatherings.

Ingredients

1 (8 oz) can crushed pineapple, drained

1 (11 oz) can mandarin oranges, drained

1 (8 oz) container Cool Whip, thawed

1 (8 oz) container sour cream

1 1/2 cups miniature marshmallows

3/4 cup sweetened shredded coconut (or to taste)

Instructions

  1. Drain the pineapple and mandarin oranges well to prevent excess liquid.
  2. In a large bowl, fold together Cool Whip and sour cream until smooth.
  3. Add pineapple, mandarin oranges, marshmallows, and shredded coconut.
  4. Gently stir until everything is evenly coated in the creamy mixture.
  5. Cover and chill in the refrigerator for at least 1 hour before serving.

Notes

Add maraschino cherries for extra sweetness and color.

Chopped pecans or walnuts give a nice crunch.

Fold in bananas, grapes, or apples just before serving for variety.

Swap sour cream with Greek yogurt for a lighter version.

Best served chilled for the flavors to blend.
