Tender, moist muffins packed with fresh apple pieces and warm cinnamon spice perfect for breakfast, brunch, or a cozy snack.

Ingredients

2 cups all-purpose flour

3/4 cup granulated sugar

2 teaspoons baking powder

1 1/2 teaspoons ground cinnamon

1/2 teaspoon salt

2 large eggs

1/2 cup milk

1/2 cup vegetable oil (or melted butter)

1 teaspoon vanilla extract

2 medium fresh apples, peeled, cored, and chopped

Instructions

  1. Preheat oven to 180 °C (350 °F) and line a 12-cup muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk eggs, milk, oil (or melted butter), and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined—do not overmix.
  5. Fold in the chopped apples until evenly distributed.
  6. Divide the batter among muffin cups, filling each about two-thirds full.
  7. Bake for 20–22 minutes, or until tops are golden and a toothpick inserted in the center comes out clean.
  8. Cool slightly before serving warm or at room temperature.

Notes

Sprinkle cinnamon-sugar on top before baking for extra sweetness.

Add a streusel topping for crunch and flavor.

Substitute half the flour with whole wheat flour for a heartier muffin.

Mix in nuts, raisins, or chocolate chips for variety.
