Crust:
2 cups cinnamon graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons butter, melted
Cheesecake:
2 (8-ounce) packages cream cheese, softened
1/2 cup packed brown sugar
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
2 tablespoons all-purpose flour
2 large eggs
Apples:
3 Gala apples, peeled and diced
1/4 cup packed brown sugar
1/2 teaspoon cinnamon
Crisp Topping:
1/2 cup all-purpose flour
1/2 cup quick oats
1/2 cup brown sugar
2 teaspoons cinnamon
4 tablespoons unsalted butter, melted
Preheat oven to 325°F (163°C). Grease a 9-inch springform or regular pie pan with nonstick spray.
Mix graham cracker crumbs, granulated sugar, and melted butter in a medium bowl.
Press into the prepared pan and bake for 8-10 minutes, until golden brown. Set aside to cool.
Beat softened cream cheese and brown sugar together until smooth.
Add vanilla, cinnamon, and flour, mixing until incorporated.
Add eggs one at a time, beating well after each addition.
Pour the cheesecake batter over the cooled crust, smoothing the top.
