Ingredients

Chicken Filling

  • 2 chicken breasts, finely diced
  • 2 tbsp hoisin sauce

  • 1 tsp minced fresh ginger

Coleslaw

  • 1 (397g) bag coleslaw
  • 4 green onions, thinly sliced
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey

Wonton Shells and Toppings

  • 16 Wonton wrappers
  • Sweet chili sauce, to serve
  • Chopped cilantro, to serve
  • Sesame seeds, to serve
  • Cooking spray or olive/canola oil for brushing

Instructions

  1. Prepare Wonton Shells: Preheat your oven to 375°F (190°C). Lightly spray or brush the wonton wrappers with cooking spray or a small amount of olive or canola oil. Drape each wrapper over the edges of a 9×13 inch baking dish so they form little cups. Bake for 7-8 minutes, watching carefully to prevent burning. Remove them from the oven while they are still pliable and gently pull them apart to create separate cups. Return to the oven and bake for another 7-8 minutes until golden and crispy.
  2. Cook the Chicken: In a large bowl, combine the diced chicken with hoisin sauce, sesame oil, soy sauce, minced garlic, and minced ginger. Heat a large skillet over high heat. Add the chicken mixture and sauté for 7-8 minutes, stirring frequently, until the chicken is fully cooked through and caramelized slightly.
  3. Prepare the Coleslaw: In a separate large bowl, toss together the coleslaw mix, sliced green onions, sesame oil, rice vinegar, soy sauce, and honey until the ingredients are evenly coated and the coleslaw is well mixed.
  4. Assemble the Tacos: Spoon the hot cooked chicken evenly into the crispy wonton shells. Top each with a generous portion of the prepared coleslaw. Drizzle sweet chili sauce over the top and finish by sprinkling chopped cilantro and sesame seeds as garnish.
  5. Serve: Arrange the chicken wonton tacos on a serving plate and enjoy immediately while the shells are crisp and the filling is warm.
