Autumn Avocado Toast features creamy avocado, crunchy pumpkin seeds, sweet-tart pomegranate seeds, and a hint of chili flakes on multigrain bread, creating a perfect balance of textures and flavors for a fall-inspired snack or meal.

Ingredients

2 slices of multigrain bread

1 ripe avocado

¼ cup pomegranate seeds

2 tablespoons pumpkin seeds

1 tablespoon olive oil

½ teaspoon chili flakes (optional)

Salt and pepper to taste

Instructions

  1. Toast the multigrain bread slices until they’re golden brown and crispy.
  2. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth, adding salt and pepper to taste.
  3. Once the bread is toasted, spread the mashed avocado evenly onto each slice.
  4. Top the avocado with pomegranate seeds and pumpkin seeds.
  5. Drizzle olive oil over the toast and sprinkle with chili flakes (if using) for an extra kick.
  6. Serve immediately and enjoy!

Notes

For extra flavor, try adding a squeeze of fresh lemon juice or balsamic glaze over the top.
