Ingredients

For the Mushrooms

250 grams chestnut mushrooms, cleaned and sliced

1 clove garlic, crushed

15 millilitres extra virgin olive oil

15 millilitres tamari sauce

2 tablespoons fresh thyme leaves

Freshly ground black pepper, to taste

For the Avocado

1 ripe avocado

Juice of 1/2 lemon

Pinch sea salt or pink Himalayan salt

To Serve

2 slices sourdough bread or bread of choice

Instructions

  • Prepare the Mushrooms:

    • Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, until softened and the moisture has released.

    • Add crushed garlic and cook for 1-2 minutes, until fragrant.

    • Stir in tamari sauce and fresh thyme leaves, cooking for another 2-3 minutes. Season with freshly ground black pepper. Remove from heat and set aside.

  • Prepare the Avocado:

    • Halve and pit the avocado. Scoop the flesh into a bowl and mash it with a fork.

    • Add the lemon juice and a pinch of salt, and mix until smooth.

  • Toast the Bread:

    • Toast the sourdough slices to your liking in a toaster or grill pan, until crispy and golden brown.

  • Assemble the Toast:

    • Spread the mashed avocado evenly over the toasted bread slices.

    • Top with the sautéed mushrooms, spreading them out evenly.

    • Serve immediately, optionally garnishing with additional thyme or red pepper flakes for a spicy kick.
