This Avocado Garlicky Mushroom Toast combines creamy avocado, savory garlic mushrooms, and crispy toast for a delicious, nutritious breakfast or snack. For the Mushrooms
250 grams chestnut mushrooms, cleaned and sliced
1 clove garlic, crushed
15 millilitres extra virgin olive oil
15 millilitres tamari sauce
2 tablespoons fresh thyme leaves
Freshly ground black pepper, to taste
For the Avocado
1 ripe avocado
Juice of 1/2 lemon
Pinch sea salt or pink Himalayan salt
To Serve
2 slices sourdough bread or bread of choice
Prepare the Mushrooms:
Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, until softened and the moisture has released.
Add crushed garlic and cook for 1-2 minutes, until fragrant.
Stir in tamari sauce and fresh thyme leaves, cooking for another 2-3 minutes. Season with freshly ground black pepper. Remove from heat and set aside.
Prepare the Avocado:
Halve and pit the avocado. Scoop the flesh into a bowl and mash it with a fork.
Add the lemon juice and a pinch of salt, and mix until smooth.
Toast the Bread:
Toast the sourdough slices to your liking in a toaster or grill pan, until crispy and golden brown.
Assemble the Toast:
Spread the mashed avocado evenly over the toasted bread slices.
Top with the sautéed mushrooms, spreading them out evenly.
Serve immediately, optionally garnishing with additional thyme or red pepper flakes for a spicy kick.
