  • Coarsely ground black pepper or pepper medley, to taste

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the instant yeast, sugar, salt, and flour. Gradually add the warm water (105-110°F) and olive oil while mixing until a shaggy dough forms. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm place for approximately 1 to 1.5 hours or until doubled in size.
  2. Shape the Dough: After the dough has risen, punch it down gently to release air. Roll the dough out on a floured surface into a large circle, roughly 12 inches in diameter. Transfer the dough to a parchment-lined baking sheet or pizza stone.
  3. Prepare the Brie: Pat dry the wheel of Brie with a paper towel. Place the Brie wheel directly in the center of the rolled-out dough. If desired, sprinkle the Brie with freshly ground black pepper or a pepper medley.
  4. Form the Bread Ring: Cut the dough into strips about 1 to 1.5 inches wide around the Brie, creating about 16 strips. Fold each strip over the cheese, alternating directions to create a woven braided effect that completely encases the Brie center but leaves some cheese exposed at the top to allow it to melt evenly.
