Baked Feta Eggs combines roasted tomatoes, bell peppers, and feta cheese, with eggs baked to perfection for a creamy and flavorful dish. This meal is perfect for breakfast, brunch, or dinner and can be customized with your favorite ingredients.

Ingredients

2 cups cherry or grape tomatoes

1 red bell pepper, diced

½ small red onion, diced

3 cloves minced garlic

8 ounces feta cheese

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon sea salt

½ teaspoon dried thyme

½ teaspoon ground black pepper

½ teaspoon red pepper flakes

1 cup chopped baby spinach

4 large eggs

Optional for topping: chopped fresh basil or fresh chives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine cherry tomatoes, red bell pepper, onion, and garlic. Drizzle with 2 tablespoons of olive oil and sprinkle with oregano, salt, thyme, black pepper, and red pepper flakes. Toss to coat evenly.
  3. Place the block of feta cheese in the center of the dish surrounded by the vegetables. Drizzle the remaining 2 tablespoons of olive oil over the feta.
  4. Bake in the oven for 25-30 minutes, or until vegetables are softened and the feta is golden and slightly melted.
  5. Remove from the oven and stir the roasted vegetables and feta to create a creamy sauce.
  6. Stir in chopped baby spinach and make four small wells in the mixture. Crack an egg into each well.
  7. Return to the oven and bake for another 10-12 minutes or until the eggs are cooked to your desired doneness.
  8. Garnish with fresh basil or chives and serve with crusty bread or over greens.

Notes

For extra protein, consider adding cooked sausage, bacon, or grilled chicken to the vegetable mixture.

If you prefer a different cheese, try goat cheese, ricotta, or mozzarella.

Increase the heat by adding more red pepper flakes or fresh chili slices.
