Ingredients

3 ripe but firm pears (e.g., Concorde or Green Anjou)

1 tablespoon liquid honey, plus more for serving

4 sprigs fresh thyme

6 teaspoons soft blue cheese (such as gorgonzola)

6 walnut halves

Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash pears, cut them in half lengthwise, and scoop out the cores.
  3. Arrange pear halves cut side up in a baking dish.
  4. Drizzle with honey and season lightly with salt and black pepper.
  5. Tuck a thyme sprig beside each pear half.
  6. Bake for 20–25 minutes, until pears are tender but hold their shape.
  7. Remove from oven and fill each hollow with 1 teaspoon gorgonzola.
  8. Top with a walnut half and return to oven for 3–4 minutes, until cheese softens.
  9. Drizzle with extra honey before serving warm.

Notes

Substitute gorgonzola with goat cheese for a milder taste.

Add a drizzle of balsamic glaze before serving for extra depth.

Serve with prosciutto on the side for a savory twist.

Replace walnuts with pecans, hazelnuts, or almonds if desired.

Brush cut pears with lemon juice to prevent browning if prepping ahead.
