These crispy and golden Zucchini Tots are a delightful and healthier alternative to traditional tater tots, made from fresh grated zucchini, cheddar cheese, and seasoned with Italian herbs. Baked to perfection, they make a delicious snack or side dish that pairs wonderfully with your favorite dipping sauce.

Ingredients

Ingredients

  • 2 cups zucchini (grated, about 2 medium zucchinis)
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • ½ cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon onion powder
  • Salt and pepper to taste
  • Ketchup for serving

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare the zucchini: Place the grated zucchini into a clean kitchen towel and firmly squeeze out all excess moisture. Discard the liquid. This step is crucial to ensure your tots are crispy. You should be left with about 1 cup of packed zucchini.
  3. Mix the ingredients: Transfer the dried zucchini to a medium bowl. Add the egg, shredded cheddar cheese, panko breadcrumbs, Italian seasoning, onion powder, salt, and pepper. Stir well until the mixture binds together and can hold its shape.
  4. Form the tots: Using about 1 tablespoon of mixture each, form small oval-shaped tots resembling traditional tater tots. This recipe should yield approximately 16 tots.
  5. Bake the tots: Arrange the zucchini tots evenly on the prepared baking sheet. Place in the oven and bake for 25 to 30 minutes, turning them halfway through baking to ensure even browning. Bake until they turn golden and crispy on the outside.
  6. Serve: Remove from the oven and serve warm with ketchup or your favorite dipping sauce for a tasty treat.

Notes

  • Make sure to squeeze out as much liquid as possible from the zucchini to prevent soggy tots.
  • You can substitute panko breadcrumbs with gluten-free breadcrumbs to make the recipe gluten-free.
  • For a different flavor, try adding garlic powder or a pinch of paprika to the mixture.
  • Leftover zucchini tots can be refrigerated for up to 3 days and reheated in the oven for best texture.
  • These tots can also be frozen before baking; bake them directly from frozen, adding a few extra minutes to the bake time.
