Tomato and Cheese Mixture

  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls (ciliegine or pearls)
  • 2 Tbsp finely chopped fresh basil
  • Kosher salt, to taste
  • Fresh black pepper, to taste

Chicken

  • 2 lb boneless, skinless chicken breasts, pounded to even thickness
  • 2 Tbsp avocado oil or other high-heat oil
  • Kosher salt, to taste
  • Fresh black pepper, to taste

Instructions

  1. Prepare the sauce: In a medium bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, and Dijon mustard. Season with kosher salt and fresh black pepper to taste. Set aside.
  2. Make the tomato and cheese mixture: In another bowl, gently toss halved grape tomatoes, fresh mozzarella balls, and chopped basil. Season with kosher salt and fresh black pepper to taste. Set aside.
  3. Preheat the oven: Set your oven to 400 degrees Fahrenheit (204 degrees Celsius) to prepare for baking.
  4. Sear the chicken: Heat 2 tablespoons of avocado or other high-heat oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts generously with salt and pepper on all sides. Once the oil is shimmering hot, add the chicken to the skillet in a single layer. Cook for 1 to 2 minutes per side until each side is lightly golden brown.
  5. Add the balsamic sauce: Pour the prepared balsamic glaze over the seared chicken in the skillet. The sauce should quickly come to a simmer. Use a wooden spoon to scrape up any browned bits from the bottom of the pan, incorporating that flavor into the sauce.
