Banana-Strawberry Cheesecake Fantasy is a luscious dessert that combines creamy cheesecake filling with ripe bananas, fresh strawberries, and a buttery graham cracker crust. This delightful twist on the classic cheesecake is perfect for any occasion, offering a fruity and indulgent treat that will impress your guests with its vibrant flavors and creamy texture.

 

Ingredients

Crust:

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

Filling:

3 ripe bananas, mashed

3 tablespoons lemon juice

4 (8 oz) packages cream cheese, softened

1 1/2 cups granulated sugar

4 large eggs

1 cup sour cream

1 teaspoon vanilla extract

1/4 cup all-purpose flour

Topping:

1 1/2 cups chopped strawberries

Instructions

  1. Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan and set aside.

  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated with butter.

  3. Press the graham cracker mixture into the bottom of the springform pan to form a crust. Bake for 10 minutes, then remove from the oven and set aside to cool.

  4. In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.

  5. Add the mashed bananas and lemon juice to the cream cheese mixture and mix until well combined.

  6. Add the eggs one at a time, mixing well after each addition. Then, add the sour cream, vanilla extract, and flour, mixing until everything is fully incorporated.

  7. Pour the cheesecake batter into the cooled graham cracker crust and spread evenly.

  8. Bake for 55-60 minutes, or until the center is set with a slight jiggle when the pan is shaken.

  9. Turn off the oven and let the cheesecake cool in the oven for 1 hour. Then, remove it and allow it to cool to room temperature.

  10. Refrigerate the cheesecake for at least 4 hours or overnight to fully set.

  11. Before serving, top the cheesecake with chopped fresh strawberries.

Notes

You can use a mix of berries, such as raspberries or blueberries, for a different flavor.

For an extra indulgent touch, drizzle melted chocolate over the cheesecake.

A banana caramel topping with sliced bananas and caramel sauce is a great variation.

If you prefer a different texture, add crushed nuts (like almonds or pecans) to the graham cracker crust.
