Ingredients

For the Sauce and Bananas

  • 6 tablespoons unsalted butter, cut into pieces
  • ½ cup coconut sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of kosher salt
  • 3 medium bananas, peeled and sliced lengthwise, then crosswise
  • ¼ cup dark rum

To Serve

  • 2 scoops vanilla ice cream

Instructions

  1. Make the sauce. In a large skillet over medium heat, melt the butter with the coconut sugar, vanilla extract, cinnamon, and kosher salt. Whisk constantly for about a minute until the mixture starts to bubble and becomes aromatic.
  2. Soften the bananas. Add the sliced bananas to the skillet with the cut side down. Cook for 1 to 2 minutes until the bananas are softened and slightly caramelized, then use a spatula to carefully flip them over to cook the other side briefly.
  3. Flambé the sauce. Turn off the heat to prevent accidents. With the sauce still bubbling, add the dark rum. Using a long-reach lighter, ignite the sauce to flambé. Gently shake the pan until the flame naturally extinguishes, allowing the alcohol to burn off and flavor to develop.
  4. Serve with ice cream. Divide the bananas and sauce evenly between two serving plates, then top each with a scoop of vanilla ice cream. Serve immediately while warm so the ice cream melts slightly, creating a creamy combination.

  • Be very careful when flambéing; always turn off the heat before adding alcohol and ignite safely.
  • Coconut sugar can be substituted with brown sugar if unavailable.
