Ingredients

Beef Mix:

500g ground beef

1/2 onion, diced

1/3 tsp cayenne pepper

1/2 tsp chili powder

1/3 tsp ground cumin

1 clove garlic, crushed

3 tbsp ketchup

Scrambled Eggs:

6 eggs

1/2 tbsp butter

1/2 tbsp cream cheese

Burrito Assembly:

4 large tortillas (810 inches)

2 tomatoes, diced

250g grated cheese

Spring onion, thinly sliced

Instructions

  • In a skillet over medium heat, cook onion until softened. Add ground beef and cook until browned. Stir in cayenne, chili powder, cumin, garlic, and ketchup; cook until combined and heated through. Set aside.

  • Whisk eggs in a bowl. Melt butter in a nonstick pan over low heat. Add eggs and cream cheese; gently scramble until soft and creamy. Remove from heat before fully set.

  • Warm tortillas until pliable.

  • Layer beef mixture, scrambled eggs, diced tomatoes, cheese, and spring onions on each tortilla.

  • Fold sides and roll tightly to enclose filling. Serve immediately.
