Instructions

  1. Chop Nuts: Begin by breaking up the raw pecans or walnuts into small, manageable pieces using a knife or your hands. This adds a crunchy texture when pressed onto the cheese.
  2. Cube Cheese: Cut the block of feta cheese into roughly 1/2-inch bite-sized cubes. Alternatively, if using goat cheese, break pieces off the log and roll into small balls to form the cheese component of the skewers.
  3. Slice Beets: Using pre-cooked beets, slice them into bite-sized pieces approximately 1/2-inch to 3/4-inch thick to match the size of the cheese for balanced skewering.
  4. Assemble Skewers: Take small 4-inch skewers and thread one beet piece, then a folded bundle of about 5 baby arugula leaves, followed by a cube of feta. Fold arugula in half for a more compact bundle that holds securely between beet and cheese. Place each completed skewer on a serving platter and repeat until ingredients are used up.
  5. Add Nuts and Season: Gently press some of the chopped pecans onto each feta cube so they stick. Drizzle balsamic glaze and olive oil lightly over the skewers. Finish by seasoning with salt and freshly ground black pepper to taste. Serve immediately as a fresh, colorful appetizer.
