A vibrant and flavorful appetizer made with creamy beet hummus, fresh tomato topping, and crispy toasted bread. Perfect for parties, gatherings, or a quick snack.

Ingredients

1 container Trader Joe’s beet hummus

1 large tomato, diced

2 tbsp onion, finely diced

1 clove garlic, finely minced

2 tbsp fresh cilantro, chopped

1 tsp extra virgin olive oil

1/2 tsp balsamic vinegar

Salt and pepper, to taste

1 baguette, sliced (or preferred bread)

Instructions

  1. Preheat oven to 375°F (190°C). Slice baguette and arrange pieces on a baking sheet.
  2. Drizzle bread lightly with olive oil and toast for 8–10 minutes, until golden and crisp.
  3. In a small bowl, mix tomato, onion, garlic, cilantro, olive oil, balsamic vinegar, salt, and pepper.
  4. Spread a generous layer of beet hummus on each toasted slice.
  5. Spoon the tomato mixture over the hummus and serve immediately.

Notes

Add avocado slices on top for extra creaminess.

Sprinkle with vegan feta for a tangy twist.

Use fresh basil instead of cilantro for an Italian flavor.

Top with roasted chickpeas or sunflower seeds for crunch.

Assemble just before serving to avoid sogginess.
