These Berry Breakfast Popsicles are a refreshing and healthy morning treat perfect for warm days. Made with creamy Greek yogurt, sweet frozen bananas, mixed berries, and crunchy granola, they offer a balanced combination of protein, fiber, and natural sweetness. Easy to prepare in just 10 minutes with no cooking required, these popsicles are an ideal quick breakfast or snack for families or meal prepping.

Ingredients

Base Blend

  • 2 cups Greek yogurt, full fat preferably
  • 2 medium bananas, sliced and frozen previously
  • ½ tsp vanilla extract
  • ¼ cup milk, regular or plant based (as needed)
  • 1-2 tbsp honey or maple syrup (optional)

Fruits

  • 1- cups mixed berries (strawberries chopped; blueberries and raspberries whole)

Toppings

  • 1- cups granola (as much as you like)

Instructions

  1. Prepare the base blend: In a blender, combine the Greek yogurt, vanilla extract, frozen sliced bananas, and sweetener if using. Blend until a thick smoothie purée forms. Add a little milk if necessary to facilitate blending.
  2. Prepare the berries: Chop the strawberries into small pieces to match the size of whole blueberries and raspberries. Gently mix all the berries together.
  3. Assemble the popsicles: Spoon 2-4 tablespoons of the mixed berries into the bottom of each popsicle mold. Fill each mold about three-quarters full with the yogurt-banana blend. Top each mold with 2-4 tablespoons of granola. Cover the molds with lids or foil.
  4. Freeze: Place the molds in the freezer and freeze overnight or for at least 4 hours until fully set.
  5. Serve: Remove the popsicles from the freezer about 10 minutes before serving to soften slightly. If they are difficult to remove from the molds, run warm tap water over the outside of the molds for a few seconds. Enjoy your fresh and nutritious berry breakfast popsicles!
