A quick and flavorful Black Pepper Chicken with Mushrooms recipe featuring tender chicken breast slices marinated in savory sauces and freshly ground black pepper, stir-fried with mushrooms and optional bell peppers for a deliciously aromatic dish perfect for a weeknight dinner.

Ingredients

Chicken Marinade

  • 1 lb chicken breast, sliced thin
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon black pepper, freshly ground
  • 1 tablespoon cornstarch

Vegetables and Aromatics

  • 1 cup mushrooms, sliced
  • 1/2 cup bell peppers, sliced (optional)
  • 1/4 cup green onions, chopped
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced

Cooking Oils and Broth

  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1/4 cup chicken broth

Instructions

  1. Marinate the Chicken: In a bowl, combine the sliced chicken breast with soy sauce, oyster sauce, freshly ground black pepper, and cornstarch. Mix thoroughly to coat all pieces evenly and let it marinate for 10 minutes to absorb the flavors.
  2. Cook the Chicken: Heat vegetable oil in a pan over medium-high heat. Add the marinated chicken and cook until the chicken pieces turn golden brown and are almost cooked through. Remove the chicken from the pan and set aside to prevent overcooking.
  3. Sauté Aromatics: In the same pan, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant, making sure not to burn the garlic.
  4. Cook Vegetables: Add the sliced mushrooms and optional bell peppers to the pan. Stir-fry for 2 to 3 minutes until the vegetables soften but still retain some crispness.
  5. Combine Chicken and Sauce: Return the cooked chicken to the pan with the vegetables. Pour in the chicken broth and stir to combine. Cook for another 2 minutes to allow the flavors to meld and the sauce to slightly thicken.
  6. Finish and Garnish: Drizzle the sesame oil over the dish and sprinkle with chopped green onions. Give it a final stir and serve hot for a delicious meal.

Notes

  • For extra heat, you can add sliced chili peppers along with the garlic and ginger.
  • If you prefer a thicker sauce, mix an additional teaspoon of cornstarch with cold water and add it towards the end of cooking.
  • Serve this dish with steamed rice or noodles for a complete meal.
  • Adjust the amount of black pepper according to your spice preference.
  • You can substitute chicken breast with thigh meat for juicier results.
