A refreshing and vibrant salad featuring sweet blood oranges, creamy avocado, tangy feta, and crisp greens tossed in a zesty lime dressing.

Ingredients

2 tbsp extra virgin olive oil

2 tsp fresh lime juice

Zest of 1 lime

2 tsp honey

½ tsp sea salt

¼ tsp ground black pepper

5 cups baby greens (spring mix, arugula, or spinach mix)

3 blood oranges, peeled and sliced

1 shallot, thinly sliced

1 avocado, peeled and sliced

⅓ cup crumbly feta cheese

Instructions

  1. Whisk together olive oil, lime juice, lime zest, honey, salt, and black pepper in a small bowl to make the dressing.
  2. Add baby greens to a large bowl and toss lightly with the dressing.
  3. Arrange blood orange slices, shallot, and avocado over the greens.
  4. Sprinkle with feta cheese for a tangy finish.
  5. Serve immediately to keep greens crisp and fresh.

Notes
