A wholesome, protein-rich breakfast bake made with cottage cheese, bananas, oats, and blueberries, baked to a soft, cake-like texture that’s perfect for breakfast, brunch, or a healthy snack.

Ingredients

1 large egg

1 ½ ripe bananas (about 6 oz / 170 g total)

1 cup (230 g) cottage cheese, full fat recommended

1 cup (100 g) rolled oats, gluten-free if necessary

¾ cup (115 g) blueberries, fresh or frozen

Optional: 2 to 4 tablespoons maple syrup or honey

Optional: 1 teaspoon lemon juice

Optional: 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease or line an 8×8-inch baking dish.
  2. In a blender or food processor, combine egg, bananas, cottage cheese, oats, and any optional maple syrup, lemon juice, or vanilla. Blend until mostly smooth.
  3. Gently fold in blueberries.
  4. Pour mixture into the prepared baking dish and spread evenly.
  5. Bake for 35–40 minutes, or until set in the center and lightly golden on top.
  6. Allow to cool slightly before slicing. Serve warm or chilled.

Notes

Use strawberries, raspberries, or mixed berries instead of blueberries.

Stir in chopped nuts for extra crunch.

Add cinnamon or nutmeg for warm spice.

Replace bananas with unsweetened applesauce for a different flavor.

Top with yogurt or nut butter for serving.
