For the Lobster Tails:
4 lobster tails
8 cups water
2 teaspoons salt
For the Garlic Lemon Butter Sauce:
1 stick salted butter
1 teaspoon minced garlic
⅛ teaspoon black pepper
2 tablespoons minced parsley
1 tablespoon lemon juice
Bring 8 cups of salted water to a boil in a large pot.
Cut lobster tail shells lengthwise with kitchen shears and gently lift the meat slightly.
Boil the lobster tails for 1 minute per ounce, or 6–8 minutes, until shells are red and meat is opaque.
While lobster cooks, melt butter in a saucepan over low heat. Add garlic and cook until fragrant. Stir in black pepper, parsley, and lemon juice.
