Combining creamy brie with sweet bourbon-infused brown sugar, buttery roasted pecans, and crispy mini phyllo shells, these bite-sized treats are rich, flavorful, and sure to impress your guests with minimal effort.

Ingredients

Filling Ingredients

  • ¼ cup packed brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon bourbon
  • ¼ cup roasted chopped pecans
  • 8 ounces round of brie, cut into small pieces

Shells

  • 1.9 ounces package frozen mini fully baked phyllo shells (about 15 shells)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the brie bites.
  2. Prepare the bourbon pecan glaze: In a small bowl, combine the packed brown sugar, melted unsalted butter, and bourbon. Mix well until the sugar dissolves and the mixture is smooth.
  3. Fill the shells: Place a small cube of brie into each mini phyllo shell. Spoon a small amount of the bourbon glaze over the brie, then sprinkle each with roasted chopped pecans evenly for a crunchy topping.
  4. Bake the bites: Arrange the filled shells on a baking tray and bake in the preheated oven for about 8-10 minutes, or until the brie is melted and bubbly and the tops are slightly caramelized.
  5. Serve warm: Remove from the oven and allow to cool slightly before serving. These bites are best enjoyed warm to appreciate the melted brie and sweet glaze.

Notes

  • To roast pecans: Toast pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and lightly browned.
  • Ensure mini phyllo shells are fully thawed if frozen before filling.
  • Use a small knife to cut the brie into cubes that will fit easily into the phyllo shells.
  • For a stronger bourbon flavor, increase bourbon to 2 tablespoons, but adjust sugar accordingly to maintain sweetness.
  • These bites can also be prepared ahead and baked just before serving.
