Boursin Chicken is a delightful and creamy skillet chicken recipe where tender chicken breasts are cooked to perfection and served in a rich sauce made from Boursin Fine Herbs & Garlic cheese, onions, and chicken broth. This quick and easy meal takes just 30 minutes, making it ideal for a flavorful weeknight dinner.

Ingredients

Chicken

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 1/2 medium onion, chopped
  • 3/4 cup chicken broth (use low sodium if sensitive to salt)
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • 1-2 tablespoons chopped parsley (optional, to taste)

Instructions

  1. Prepare the chicken: Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Season both sides with garlic powder, salt, and pepper to enhance flavor.
  2. Cook the chicken: Heat olive oil and butter together in a skillet over medium-high heat for a few minutes until hot. Add the chicken pieces and cook for 5-6 minutes on each side until fully cooked through and golden brown. Transfer the cooked chicken to a plate and set aside.
  3. Sauté the onions: In the same skillet, add chopped onions and sauté for about 5 minutes until softened and lightly browned. If the pan seems dry during cooking, add a splash more olive oil to prevent sticking.
  4. Make the sauce: Pour the chicken broth into the skillet with the onions, then add the softened Boursin cheese. Stir continuously until the sauce is smooth and combined. Let it simmer and bubble gently for 5 minutes to thicken and develop flavor. If using, stir in the chopped parsley now.
  5. Combine chicken and sauce: Return the cooked chicken pieces along with any juices from the plate back into the skillet. Stir gently to coat the chicken in the sauce and warm through for a couple of minutes. If the sauce is too thick, add a splash more chicken broth to reach desired consistency.
  6. Final seasoning and serve: Taste the sauce and season with additional salt and pepper if needed. Serve the creamy Boursin chicken immediately while hot for the best flavor and texture experience.
