A flavorful bread dipping oil made with herbs, spices, garlic, lemon zest, and parmesan. Infused with capers for brightness, this quick appetizer is perfect for serving with fresh, crusty bread.

Ingredients

1/2 tsp sumac

1 tsp za’atar

1 tsp dried oregano

1/4 tsp chili flakes

2 garlic cloves, grated or minced

1 tsp lemon zest

1 tbsp capers, chopped

Kosher salt, to taste

Freshly ground black pepper, to taste

1/3 cup extra-virgin olive oil

1 tbsp freshly grated Parmesan

1 loaf fresh bread, for serving

Instructions

  1. In a small bowl, combine sumac, za’atar, oregano, and chili flakes.
  2. Add grated garlic, lemon zest, and chopped capers.
  3. Season with kosher salt and freshly ground black pepper.
  4. Pour in the extra-virgin olive oil and stir to combine.
  5. Top with freshly grated parmesan.
  6. Serve immediately with slices of fresh bread.

Notes

Best enjoyed fresh but can be made a few hours ahead to let flavors meld.

Store leftovers in the fridge up to 3 days; bring to room temperature or gently warm before serving.

Add parmesan fresh each time to prevent clumping.

Swap parmesan with pecorino, asiago, or feta for variation.

For extra brightness, drizzle with balsamic glaze or use fresh herbs like parsley.
