Breakfast Quesadillas are a quick and satisfying handheld breakfast filled with fluffy scrambled eggs and melted cheese. Easy to make and customizable, they’re perfect for a delicious, protein-packed meal on the go or a cozy morning at home.

Ingredients

2 eggs

1 tablespoon butter (or olive oil or cooking spray)

2 flour tortillas

⅓ cup shredded cheese (Colby Jack or cheddar blends recommended)

Instructions

  • Heat a skillet over medium heat and add butter (or oil/cooking spray).

  • Beat eggs in a bowl, then scramble in skillet until cooked but still soft. Remove from heat.

  • Wipe skillet clean, return to medium heat, and place one tortilla in skillet.

  • Sprinkle half the shredded cheese evenly over the tortilla.

  • Spread scrambled eggs over cheese.

  • Top with remaining cheese and place second tortilla on top.

  • Cook 2-3 minutes until bottom tortilla is golden and cheese starts melting.

  • Carefully flip and cook another 2-3 minutes until golden and cheese is fully melted.

  • Remove, let cool slightly, then slice into wedges and serve warm.

Notes

Add diced bell peppers, onions, or spinach for extra veggies.

Add jalapeños or hot sauce for spice.

Use whole wheat or corn tortillas for different dietary needs.

Try pepper jack or mozzarella cheese for flavor variety.
