Ingredients

For the Brisket:

45 pounds beef brisket, trimmed of excess fat

1 cup water

1 tablespoon beef bouillon

2 tablespoons Worcestershire sauce

1 tablespoon reduced sodium soy sauce

1/2 cup homemade barbecue sauce (recipe below)

Spice Rub:

2 tablespoons paprika

2 tablespoons packed brown sugar

1 tablespoon chili powder

2 teaspoons garlic powder

2 teaspoons salt

1 teaspoon onion powder

1 teaspoon chipotle powder

1 teaspoon black pepper

1/2 teaspoon dried thyme

1/4 teaspoon cayenne pepper (optional)

Barbecue Sauce:

1 1/2 cups ketchup

1/3 cup molasses

1/3 cup packed brown sugar

1/4 cup seedless blackberry preserves

1/4 cup apple cider vinegar

1 tablespoon reserved Spice Rub

1 tablespoon mesquite liquid smoke (optional)

Instructions

  • Prepare the Spice Rub: Combine all spice rub ingredients in a small bowl. Rub generously over the brisket on all sides.

  • Cook the Brisket: Place the seasoned brisket in the slow cooker. Mix water, beef bouillon, Worcestershire sauce, and soy sauce, then pour over the brisket. Cook on low for 8-10 hours or high for 4-5 hours.

  • Prepare the Barbecue Sauce: In a saucepan, combine ketchup, molasses, brown sugar, blackberry preserves, apple cider vinegar, and 1 tablespoon of the spice rub. Simmer for 10-15 minutes. Add mesquite liquid smoke for extra flavor.

  • Shred the Brisket: Once cooked, remove brisket from the slow cooker, shred with forks, and return to the sauce.

  • Serve: Drizzle homemade barbecue sauce over the shredded brisket or serve on the side. Pair with coleslaw, mashed potatoes, or cornbread.

Notes

Add vegetables like onions, carrots, or potatoes for a one-pot meal.

For a gluten-free version, use gluten-free soy sauce and Worcestershire sauce.

Make it spicier by adding more cayenne or hot sauce.
