Broccoli Cheese Bites are savory, protein-packed snacks combining chickpeas, quinoa, broccoli, and cheddar cheese. These gluten-free bites are easy to make, perfect for appetizers, lunchboxes, or party finger foods, with a crispy outside and tender inside.

Ingredients

15 oz can chickpeas (about 1 ½ cups), drained and rinsed

1 ½ cups cooked quinoa

1 ½ cups chopped broccoli, boiled and drained

1 cup mature cheddar cheese, shredded

2 teaspoons garlic powder

1 teaspoon thyme

1 teaspoon basil

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½1 cup water (adjust as needed for consistency)

Instructions

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  • Mash chickpeas until mostly smooth but slightly chunky.

  • Add quinoa, broccoli, cheddar, and all spices; mix well.

  • Gradually add water, starting with ½ cup, until mixture holds together but isn’t too wet.

  • Form mixture into bite-sized balls or patties and place on baking sheet.

  • Bake 20-25 minutes, flipping halfway, until golden and firm.

  • Cool slightly before serving.

Notes

Substitute cheddar with mozzarella or pepper jack cheese.

Add chopped onions or bell peppers for texture.

Nutritional yeast adds cheesy umami flavor.

Fresh herbs like parsley or chives brighten flavor.

Add cayenne or chili flakes for spice.
