Ingredients

Salad

  • 1 whole garlic clove
  • 1½ tbsp olive oil, divided
  • 2 bunches broccolini
  • 300 g mushrooms (Portobello and Swiss brown), sliced
  • 1 red chili, thinly sliced
  • 2 tbsp pine nuts

Salad Dressing

  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp mirin
  • 2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tbsp grated ginger

Instructions

  1. Prepare the Garlic and Broccolini: Heat 1 tbsp olive oil in a large skillet over medium heat. Add the whole garlic clove and sauté briefly until fragrant. Add the broccolini and cook, stirring occasionally, until tender-crisp and bright green, about 5-7 minutes. Remove the garlic clove before serving.
  2. Sauté the Mushrooms: In the same skillet, add the remaining ½ tbsp olive oil. Add the sliced Portobello and Swiss brown mushrooms, cooking until they release their moisture and turn golden brown, about 6-8 minutes.
  3. Toast the Pine Nuts: In a small dry pan over medium heat, toast the pine nuts, stirring frequently, until they are golden and fragrant, about 3-4 minutes. Set aside.
  4. Make the Dressing: In a small bowl, whisk together the soy sauce, brown sugar, mirin, rice wine vinegar, sesame oil, and grated ginger until the sugar is dissolved and the dressing is well combined.
  5. Combine Salad Components: In a large mixing bowl, toss the sautéed broccolini, mushrooms, toasted pine nuts, and sliced red chili with the prepared dressing until everything is evenly coated.
  6. Serve: Plate the salad immediately or chill briefly before serving to enhance the flavors. Enjoy as a light meal or side dish.
