This delightful Brown Sugar Peach Cake combines a moist yellow cake base with fresh peaches and a rich, caramel-like brown sugar frosting. Perfectly balanced between sweet and fruity, this cake is an irresistible dessert that’s easy to prepare and bakes quickly for any occasion.

Ingredients

Cake Ingredients

  • 15 ounce yellow cake mix (such as Duncan Hines)
  • 3 large eggs (or as specified by your cake mix)
  • 1/3 cup vegetable oil (or as specified by your cake mix)
  • 1/2 cup peach nectar or peach juice
  • 1 lb peeled and chopped peaches (about 3-4 peaches)
  • Drop of orange food coloring (optional)

Frosting Ingredients

  • 1/2 cup unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 1/2 cups confectioner’s sugar, sifted

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s at the perfect temperature when your cake batter is ready.
  2. Prepare Cake Batter: In a mixing bowl, blend together the yellow cake mix, eggs, vegetable oil, peach nectar or juice, and optional orange food coloring until well combined. Gently fold in the peeled and chopped peaches to distribute evenly without overmixing.
  3. Bake the Cake: Pour the batter into a lightly sprayed 9×12-inch baking pan. Bake for approximately 28 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  4. Make the Frosting: In a saucepan over medium heat, combine the unsalted butter, heavy cream, and brown sugar. Stir constantly and bring the mixture to a boil. Remove from heat and add vanilla extract along with the sifted confectioner’s sugar. Whisk well until smooth and all sugar lumps dissolve. If needed, return to low heat briefly to maintain smoothness.
  5. Frost the Cake: Immediately pour the warm frosting evenly over the baked cake to coat the surface. Aim to cover it evenly on the first pour as the frosting will set quickly and become difficult to spread without cracking.
  6. Set and Serve: Allow the frosting to harden at room temperature or refrigerate before slicing and serving for best texture and flavor.

Notes

  • Use fresh, ripe peaches for the best flavor and texture.
  • Orange food coloring is optional and helps enhance the peach color aesthetically.
  • Check the cake a few minutes before the suggested baking time to avoid overbaking.
  • Let the cake cool slightly before adding frosting if desired, but pour frosting while warm to ensure it spreads smoothly.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
