A simple and flavorful Bruschetta Chicken Bake featuring tender chicken breasts topped with a fresh tomato and basil mixture, melted mozzarella cheese, and a hint of garlic. Perfect for a quick weeknight dinner.

Ingredients

3 boneless, skinless chicken breasts

2 cups diced tomatoes

3 cloves garlic, minced

¼ cup fresh basil leaves, chopped

2 tablespoons olive oil

1 cup mozzarella cheese, shredded or diced

Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season the chicken breasts with salt and pepper and place in the baking dish.
  3. In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, and olive oil. Season with salt and pepper and mix well.
  4. Spoon the tomato mixture over the chicken breasts, covering them generously.
  5. Bake in the preheated oven for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
  6. Remove from the oven and sprinkle the shredded mozzarella cheese evenly over the chicken breasts. Return to the oven for 5-7 minutes, until the cheese is melted and bubbly.
  7. Serve with your favorite side dish such as rice, roasted vegetables, or a simple salad.

Notes

For added flavor, drizzle balsamic glaze over the top before serving.

For a spicy kick, add red pepper flakes to the bruschetta mixture.

Use provolone, goat cheese, or parmesan instead of mozzarella for different flavors.

Top with panko breadcrumbs for a crispy finish.
