Burrata Bruschetta with Caprese Topping combines creamy burrata cheese with a fresh Caprese-style topping of juicy tomatoes, basil, red onion, and a drizzle of balsamic glaze, all served on toasted bread for a delicious appetizer or light meal.

Ingredients

2 cups grape tomatoes, halved

¼ cup chopped red onion

1 clove garlic, grated

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

1 teaspoon salt

½ teaspoon black pepper

¼ cup chopped fresh basil

8 slices crusty bread

1 clove garlic

8 ounces burrata

2 tablespoons balsamic glaze

Instructions

  1. Prepare the topping: In a bowl, combine the halved grape tomatoes, chopped red onion, grated garlic, olive oil, balsamic vinegar, salt, black pepper, and fresh basil. Toss everything together until well mixed. Set aside to marinate for at least 10 minutes to allow the flavors to meld.
  2. Toast the bread: Preheat your grill or oven to medium heat. Toast the slices of crusty bread until golden and crisp on both sides, about 2-3 minutes per side.
  3. Prepare the garlic: Once the bread is toasted, rub each slice with a peeled clove of garlic to infuse the bread with garlic flavor.
  4. Assemble the bruschetta: Place the toasted bread slices on a serving platter. Tear the burrata into small pieces and place it on top of each slice of toast. Spoon the Caprese topping generously over the burrata.
  5. Finish with balsamic glaze: Drizzle the balsamic glaze over the bruschetta for an added touch of sweetness and tang.
  6. Serve: Serve immediately while the bread is still warm and enjoy the perfect balance of flavors!

Notes

For added richness, consider drizzling extra olive oil on the bread before toasting.

If you want a sweeter version, add a little honey to the balsamic glaze.

Feel free to add other toppings like sliced avocado or a sprinkle of parmesan cheese.
