This homemade Cafe Rio-style Creamy Tomatillo Dressing brings the bold, zesty flavors of the famous restaurant dressing into your kitchen. Creamy, tangy, and spicy with tomatillos, jalapeños, and fresh cilantro, it’s perfect for drizzling over salads, tacos, or burritos. Quick, easy, and packed with flavor!

Ingredients

1 (1 ounce) package Hidden Valley Ranch Dressing mix

1 cup buttermilk

1 cup mayonnaise

1 large or 2 small tomatillos, husked and quartered

1 clove garlic, minced

1/2 bunch cilantro, chopped

1/2 teaspoon lime juice

1/2 to 1 small jalapeño, seeds removed

Instructions

  • Prepare the Tomatillos: Remove the husks from the tomatillos and rinse them well. Cut them into quarters for easier blending.

  • Blend the Ingredients: In a blender or food processor, combine the tomatillos, ranch dressing mix, buttermilk, mayonnaise, garlic, cilantro, lime juice, and jalapeño. Blend until smooth and creamy.

  • Taste and Adjust: Taste the dressing and adjust the heat or tanginess by adding more jalapeño or lime juice if needed. Add extra mayonnaise or buttermilk if it’s too tangy.

  • Chill the Dressing: Transfer the dressing to a container and refrigerate for at least 30 minutes to allow the flavors to meld.

  • Serve: Drizzle over salads, tacos, burritos, or any dish that could use a creamy, tangy boost. Enjoy!

Notes

For a milder dressing, remove all seeds from the jalapeño or use half of a small one.

You can substitute the cilantro with fresh parsley if you don’t like cilantro.

Adjust the consistency by adding more buttermilk if it’s too thick.

Can be made ahead of time and stored for up to 1 week in the refrigerator.
