Ingredients

Vegetables

  • 1 cup diced red bell pepper
  • 1 cup diced yellow or green bell pepper
  • 1 cup diced celery
  • 1 cup diced white or yellow onion
  • 4 cloves garlic, minced

Meat

  • 12 ounces andouille sausage or kielbasa, sliced

Other Ingredients

  • 1 tablespoon olive oil
  • 3 tablespoons tomato paste
  • 1 ¾ cups low-sodium chicken broth
  • 1 ¼ cups instant white rice
  • Cajun seasoning, to taste
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat the skillet: Heat a large skillet over medium heat to prepare for sautéing.
  2. Sauté vegetables: Add olive oil to the hot skillet, then add diced red bell pepper, yellow or green bell pepper, celery, and onion. Cook and stir for 4-5 minutes until the vegetables are softened.
  3. Cook sausage: Add the sliced andouille sausage or kielbasa to the skillet and cook until browned on both sides, approximately 5 minutes.
  4. Add garlic: Incorporate minced garlic into the skillet and cook for about 30 seconds until fragrant.
  5. Incorporate tomato paste: Stir in the tomato paste, continuously stirring for 1 minute to combine and develop flavors.
  6. Add broth and rice: Pour in the low-sodium chicken broth and bring the mixture to a simmer. Stir in the instant white rice evenly.
  7. Simmer and finish cooking: Cover the skillet, reduce heat as needed, and cook for 5 minutes, stirring occasionally to prevent sticking and promote even cooking.
  8. Remove and garnish: Remove the skillet from the heat. Season the dish with Cajun seasoning to taste and sprinkle with chopped fresh parsley before serving.
