Ingredients

Sausage and Vegetables

  • 14 oz. Andouille sausage, sliced
  • 1 Tbsp cooking oil
  • 1 bell pepper, diced
  • 2 green onions, sliced

Spices

  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ⅛ tsp cayenne pepper
  • ⅛ tsp black pepper

Main Ingredients

  • 15 oz. fire roasted diced tomatoes
  • 1 cup long grain white rice
  • 1½ cups chicken broth

Instructions

  1. Prepare the Sausage: Heat the cooking oil over medium-high heat in a large skillet. Add the sliced Andouille sausage and cook until browned and slightly crispy, about 5 minutes.
  2. Add Vegetables and Spices: Stir in the diced bell pepper, smoked paprika, dried oregano, dried thyme, garlic powder, onion powder, cayenne pepper, and black pepper. Cook for 2-3 minutes until the peppers begin to soften and the spices are fragrant.
  3. Add Rice and Tomatoes: Pour in the long grain white rice and stir well to combine with the sausage and vegetables. Then add the fire roasted diced tomatoes (with juices) and mix thoroughly.
  4. Add Chicken Broth and Simmer: Pour in the chicken broth, bring the mixture to a boil, then reduce heat to a low simmer. Cover the skillet with a lid and cook for 18-20 minutes, or until the rice is tender and has absorbed the liquid.
  5. Finish and Garnish: Remove the skillet from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the sliced green onions. Serve hot.
