Caprese Avocado Boats are a fresh twist on the classic Caprese salad, featuring creamy avocado, juicy cherry tomatoes, fresh mozzarella, and basil, all drizzled with balsamic glaze for a perfect balance of savory, fresh, and slightly sweet.

Ingredients

1/2 cup cherry tomatoes, halved

2.5 teaspoons extra virgin olive oil

1/2 cup fresh mozzarella pearls

2 large avocados

34 thinly sliced fresh basil leaves

Balsamic glaze for drizzling

Instructions

  1. Slice cherry tomatoes in half and place them in a small bowl. Drizzle with 2 teaspoons of olive oil and toss to coat.
  2. Slice fresh basil leaves thinly and set aside.
  3. Cut the avocados in half, remove the pit, and scoop out a little flesh to create a boat shape.
  4. Place avocado halves on a serving plate. Fill each half with olive oil-coated tomatoes and top with fresh mozzarella pearls.
  5. Sprinkle sliced basil over each boat and drizzle with balsamic glaze just before serving.
  6. Serve immediately as a light appetizer, snack, or side dish. Enjoy the vibrant flavors of summer in every bite!

Notes

For a vegan version, omit the mozzarella pearls and add a vegan cheese alternative or extra tomatoes and basil.

Add a pinch of red pepper flakes for a spicy twist.

Replace basil with arugula or mint for a unique flavor variation.

To keep the avocado from browning, drizzle with lemon juice before assembling the boats.
