Caprese Chicken

Caprese Chicken combines the classic flavors of a Caprese salad mozzarella, tomato, basil, and balsamic vinegar with tender, juicy chicken breasts. This quick, easy-to-make dish is perfect for any occasion and bursting with fresh, vibrant flavors.

Ingredients

4 (6 ounce) skinless, boneless chicken breast halves

1 cup Italian salad dressing

1 tablespoon Italian herb seasoning

1 tablespoon chicken seasoning (such as Grill Mates® Montreal Chicken Seasoning)

2 tablespoons canola oil

4 (1/2 inch thick) slices fresh mozzarella cheese

4 (1/2 inch thick) slices tomato

4 large fresh basil leaves

1 tablespoon balsamic vinegar

Instructions

  1. Marinate the chicken: In a small bowl, mix the Italian salad dressing, Italian herb seasoning, and chicken seasoning. Place the chicken breasts in a shallow dish or resealable plastic bag and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours.
  2. Prepare the grill or skillet: Preheat your grill or a large skillet over medium-high heat. Add the canola oil to the skillet if you’re using it. If grilling, make sure the grill is greased to prevent sticking.
  3. Cook the chicken: Remove the chicken from the marinade and cook it on the grill or in the skillet for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F and is no longer pink in the center.
  4. Add the mozzarella, tomato, and basil: During the last 2 minutes of cooking, place one slice of mozzarella cheese on top of each chicken breast. Allow the cheese to melt slightly. Then, top each chicken breast with a slice of tomato and a fresh basil leaf.
  5. Drizzle with balsamic vinegar: Once the chicken is fully cooked and the cheese has melted, remove the chicken from the heat. Drizzle each piece with a little balsamic vinegar.
  6. Serve: Serve the Caprese Chicken hot, either on its own or with a side of roasted vegetables, pasta, or a light salad.

Notes

For a spicier version, add a pinch of red pepper flakes to the marinade or drizzle hot sauce on top of the chicken before serving.

Try swapping fresh mozzarella with burrata for a richer, creamier texture.

Caprese Chicken is naturally gluten-free, making it a great option for those with dietary restrictions.

If using chicken thighs instead of breasts, adjust the cooking time slightly as thighs may take a little longer to cook.

If baking in the oven, cook at 375°F for 20-25 minutes, adding the mozzarella, tomato, and basil for the last 5 minutes.
