Carne Guisada is a traditional Latin American beef stew featuring tender chuck steak slowly simmered in a flavorful blend of spices, tomatoes, and beef broth. This hearty dish is perfect for comforting family meals and is best served warm, garnished with fresh cilantro for an added burst of fresh flavor.

Ingredients

Meat and Vegetables

  • 2 1/2 tablespoons oil
  • 2 pounds chuck steak, cubed
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 large tomatoes, diced

Spices and Seasonings

  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder

Liquids

  • 2 cups beef broth

Instructions

  1. Heat and Sauté Onions and Garlic: Begin by heating oil in a pot over medium heat. Once hot, add the chopped onions and cook until they become translucent. Add minced garlic and continue cooking until fragrant, which should take about 1-2 minutes.
  2. Brown the Meat: Add the cubed chuck steak to the pot and cook until browned on all sides. This process seals in juices and adds flavor. Then add the chopped bell peppers and cook for a couple more minutes until they begin to soften.
  3. Add Tomato Ingredients: Stir in the tomato paste and cook for an additional minute to reduce its raw taste. Next, add the diced tomatoes and cook for a couple more minutes to combine flavors.
  4. Incorporate Flour and Spices: Sprinkle the all-purpose flour over the mixture and cook while stirring until heated through. This will help thicken the stew. Then pour in the beef broth and add salt, pepper, ground cumin, and chili powder. Stir to evenly distribute the spices.
  5. Simmer the Stew: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer gently for 2 hours, stirring occasionally. Add water as needed if the stew gets too thick, ensuring the meat becomes tender and the flavors meld.
  6. Serve and Garnish: Once the meat is tender and the stew is thickened to your liking, serve the carne guisada warm. Garnish with chopped fresh cilantro for an extra layer of flavor and freshness.

Notes

  • If the stew gets too thick during simmering, add small amounts of water or beef broth to maintain the desired consistency.
  • For a spicier flavor, consider adding a dash of hot sauce or some chopped jalapeños along with the chili powder.
  • Chuck steak is preferred due to its marbling, which results in a tender and flavorful stew after slow cooking.
  • This dish pairs well with white rice, warm tortillas, or crusty bread.
