Delightfully soft and festive Carrot Cake Cookies made from a simple carrot cake mix base, topped with creamy white frosting and decorated with colorful green and orange melting candies shaped like carrots. Perfect for an easy, fun dessert that looks as good as it tastes.

Ingredients

Cookie Dough

  • 1 box Carrot Cake Mix
  • 2 Eggs
  • ½ cup Oil

Decoration

  • White Frosting
  • Green Melting Candies
  • Orange Melting Candies
  • 2 Piping Bags
  • Parchment Paper

Instructions

  1. Mix Ingredients: In a large mixing bowl, combine the carrot cake mix, eggs, and oil. Mix on high speed until the batter is well combined and smooth.
  2. Chill Dough: Place the bowl with the dough into the refrigerator and chill for 30 minutes to make it easier to handle.
  3. Form Cookies: Remove the chilled dough and roll one heaping tablespoon into a ball. Place each ball onto a well-greased baking sheet, spacing them apart.
  4. Bake: Preheat the oven to 350°F (175°C). Bake the cookies for 8 minutes or until the edges turn golden brown. Once baked, allow the cookies to cool completely on a wire rack.
  5. Frost Cookies: Spread a generous layer of white frosting on the top of each cooled cookie evenly.
  6. Prepare Decorations: Lay out a sheet of parchment paper flat. Melt the green and orange melting candies separately according to their package instructions. Fill one piping bag with melted orange candies and the other with green candies. Snip a small tip off the end of each piping bag for decorating.
  7. Create Carrot Shapes: On the parchment paper, pipe the orange melted candies in a zigzag pattern, gradually reducing the size to form the carrot shape.
  8. Add Carrot Stems: Using the green melted candies, pipe a stem shape on top of the orange carrot shapes. Place the parchment paper with the decorations in the freezer for 1 minute to allow them to set firmly.
  9. Assemble Cookies: Carefully peel the carrot-shaped candy decorations off the parchment paper and gently place each onto the frosted cookies.
