This Chai Spiced Eggnog Panna Cotta is a creamy and festive dessert that combines the rich flavors of traditional eggnog with aromatic chai spices. Enhanced with the warmth of dark rum and sweet raisins, this panna cotta is a perfect holiday treat that offers a smooth, silky texture and a delightful blend of spiced and boozy notes.

Ingredients

Gelatin Mixture

  • 1 tbsp powdered gelatin
  • ¼ cup water

Main Ingredients

  • 3 cups eggnog (unpasteurized)
  • 1 tsp masala chai spice (such as Spicewalla Masala Chai Spice)
  • ½ cup raisins
  • ½ cup dark rum

Instructions

  1. Bloom the Gelatin: In a small bowl, sprinkle the powdered gelatin over the ¼ cup of water and let it sit for about 5 minutes to bloom and absorb the liquid.
  2. Heat the Eggnog and Spices: In a saucepan over medium heat, gently warm the 3 cups of unpasteurized eggnog until hot but not boiling. Stir in the 1 teaspoon of masala chai spice, mixing well to infuse the flavors.
  3. Dissolve the Gelatin: Remove the eggnog mixture from heat and whisk in the bloomed gelatin until fully dissolved and smooth.
  4. Add Rum and Raisins: Stir in the ½ cup of dark rum and ½ cup of raisins, ensuring they are evenly distributed throughout the mixture.
  5. Pour into Molds: Divide the mixture evenly into serving glasses or molds, smoothing the tops.
  6. Chill: Refrigerate the panna cotta for at least 4 to 6 hours, or until it is fully set and firm to the touch.
  7. Serve: Once set, serve chilled. Optionally, garnish with additional chai spices or a few raisins on top for presentation.

Notes

  • Use unpasteurized eggnog for a richer flavor, but pasteurized can also be used safely.
  • If you prefer a non-alcoholic version, omit the dark rum and add a splash of vanilla extract.
  • Ensure the gelatin is completely dissolved to avoid a grainy texture in the panna cotta.
  • Chilling time may vary depending on refrigerator temperature; overnight chilling guarantees the best texture.
  • Masala chai spice blends typically contain cinnamon, cardamom, ginger, cloves, and black pepper for authentic flavor.
