Chatpati Sev Puri is a popular Indian street food that combines crispy sev puris, spiced mashed potatoes, tangy chutneys, and aromatic spices. Ingredients

3 boiled potatoes

Salt to taste

¼ teaspoon red chili powder

¼ teaspoon dry mango powder (amchoor)

¼ teaspoon cumin powder (jeera powder)

2530 sev puris

1 onion, finely chopped

¼ cup green chutney

¼ cup sweet tamarind (imli) chutney

¼ cup red chili and garlic chutney

1 cup nylon sev

34 tablespoons fresh coriander, chopped

1 lemon

½ teaspoon chat masala

Instructions

  • Prepare the Potatoes: Boil the potatoes until soft, then peel and mash them. Add salt, red chili powder, dry mango powder, and cumin powder. Mix thoroughly.

  • Prepare the Sev Puri Base: Arrange the sev puris on a large plate or serving tray.

  • Assemble the Chatpati: Spoon the spiced mashed potatoes generously onto each sev puri.

  • Add the Chutneys: Drizzle green chutney, sweet tamarind chutney, and red chili and garlic chutney on top of the mashed potatoes.

  • Garnish: Add finely chopped onions, a generous amount of nylon sev, fresh coriander, and a squeeze of lemon juice.

  • Finish with Chat Masala: Sprinkle chat masala over the top to enhance flavor.

  • Serve Immediately: Serve the Chatpati Sev Puri immediately to maintain the crispiness of the puris.

Notes

Storage: Sev puris should be assembled just before serving to keep them crispy. You can prepare the spiced potatoes and chutneys ahead of time.

Variations: Add yogurt for a creamy twist, or top with boiled chickpeas for added protein. Make it spicier by adjusting the amount of chili chutney.

Crunch: To maintain crispness, add sev just before serving.
