Ingredients

Beans Masala

  • 2 slices toast (white sourdough preferred)
  • 1 x 400g tin baked beans
  • 1 tbsp ghee
  • 1/2 tsp cumin seeds
  • 1 medium-sized red onion, finely chopped
  • 1 green chilli, finely sliced on the bias
  • 1 tsp garam masala
  • 1/4 tsp turmeric
  • 1-2 tsp fresh coriander leaves and stalks, chopped

Topping for the Toasts

  • 75g Cheddar cheese, grated
  • 75g Red Leicester cheese, grated
  • 1/2 small red onion, finely chopped
  • 2 green or red chillies, finely sliced on the bias
  • 1 tbsp chopped coriander leaves
  • 2 tsp hot sauce (such as Tabasco)

Instructions

  1. Prepare the Masala: Heat 1 tablespoon of ghee in a pan over medium heat. Add 1/2 teaspoon cumin seeds and toast them until fragrant, about 1 minute. Add the finely chopped medium red onion and cook until softened and translucent, around 5 minutes.
  2. Add Spices and Chilli: Stir in the finely sliced green chilli, 1 teaspoon garam masala, and 1/4 teaspoon turmeric. Cook the spices with the onion and chilli for another 1-2 minutes to release their flavors.
  3. Add Baked Beans: Pour in the entire 400g tin of baked beans, including liquid. Stir well to combine with the spiced onion mixture. Let it simmer gently for 5-7 minutes so the flavors meld, stirring occasionally.
  4. Toast the Bread: While the beans simmer, toast the sourdough slices to your preference until golden and crisp.
  5. Assemble the Toast: Spoon the hot masala beans evenly over the toasted slices of bread.
  6. Add Cheese and Toppings: Generously sprinkle the grated Cheddar and Red Leicester cheeses over the beans. Then top with finely chopped half a red onion, 2 finely sliced chillies (green or red), and 1 tablespoon chopped fresh coriander leaves.
  7. Add Hot Sauce: Drizzle 2 teaspoons of hot sauce like Tabasco over the top for an additional spicy punch.
  8. Melt the Cheese: Place the assembled toasts under a grill (broiler) for 3-5 minutes or until the cheese has melted and lightly browned.
