1 large egg
3/4 cup whole milk
1 cup shredded cheddar cheese
1/2 cup quick-cooking oats
1/2 cup chopped onion
1/2 teaspoon salt
1 pound ground beef
2/3 cup ketchup
1/2 cup packed brown sugar
1–1/2 teaspoons prepared mustard
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
In a large bowl, beat the egg and milk together. Add shredded cheddar cheese, oats, chopped onion, and salt, and stir to combine.
Add the ground beef to the mixture and gently combine until evenly incorporated. Be careful not to overmix.
Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
In a small bowl, mix together the ketchup, brown sugar, and mustard until smooth. Pour evenly over the top of the meatloaf.
Bake for 60-70 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
For added flavor, substitute cheddar cheese with mozzarella or Monterey Jack.
For a spicy version, add hot sauce or crushed red pepper flakes to the meat mixture.
You can add vegetables like carrots or zucchini for extra moisture and nutrients.
