Cheesy Beef and Tater Tot Wraps are a delicious comfort food twist, combining seasoned ground beef, crispy tater tots, melted cheese, and smoky chipotle sauce all wrapped in a soft tortilla. Perfect for a quick and satisfying meal, these wraps are customizable and sure to be a hit with the whole family!

Ingredients

For the Beef and Tater Tots

1 pound ground beef (or substitute with ground turkey or plant-based alternative)

2 cups frozen tater tots

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup Taco Bell chipotle sauce (adjust to taste)

6 large flour tortilla wraps

Salt and pepper to taste

Optional Toppings:

Diced tomatoes

Chopped green onions

Cilantro

Instructions

  • Cook the Tater Tots: Preheat the oven according to package instructions. Bake the tater tots for 20-25 minutes until golden and crispy. Set aside.

  • Cook the Ground Beef: In a skillet, cook the ground beef (or turkey/plant-based protein), breaking it apart until browned and fully cooked. Season with salt and pepper to taste.

  • Prepare the Sauce: Reduce heat and stir in sour cream and chipotle sauce into the beef. Mix well until evenly coated. Adjust spice level with more chipotle sauce if desired.

  • Assemble the Wraps: Lay out the tortillas. Add a scoop of the beef mixture in the center, followed by a handful of crispy tater tots. Sprinkle with cheddar and Monterey Jack cheese.

  • Fold the Wraps: Fold in the sides and roll tightly to form wraps.

  • Toast the Wraps: Heat a non-stick skillet over medium heat. Place wraps seam side down and cook for 2-3 minutes per side until golden brown and the cheese is melted.

  • Serve: Slice in half and garnish with diced tomatoes, green onions, and cilantro. Serve hot!

Notes

Storage: Store leftovers in an airtight container for up to 2-3 days.

Reheating: Reheat in a skillet over medium heat, pressing with a spatula to help crisp the tortilla. You can also microwave, but the wrap won’t be as crispy.

Variations: Add veggies like sautéed bell peppers or spinach, or switch up the cheese and sauce for different flavors.
