Frico is a traditional Italian dish featuring crispy, golden layers of grated red potatoes and Montasio cheese combined with sautéed onions. This recipe results in a savory, cheesy potato cake with beautifully caramelized edges, perfect for a comforting and flavorful meal.

Ingredients

Potatoes and Cheese

  • 1.5 lbs (640g) red potatoes, peeled and grated
  • 8.8 oz (250g) Montasio cheese, cubed (about 1.5 cups)

Vegetables and Fats

  • 1 brown or white onion, finely sliced
  • 1 tablespoon (14g) unsalted butter
  • 1 tablespoon olive oil
  • Salt, to taste

Instructions

  1. Prepare Ingredients: Finely slice the onion and set aside. Peel and grate the red potatoes using a box grater and keep them separately.
  2. Sauté Onions: Melt butter and olive oil in a small pan over medium heat. Add the sliced onions and sauté until they become soft and translucent, approximately 10 minutes.
  3. Cook Potatoes: Add the grated potatoes to the pan and season with a generous pinch of salt. Cook over medium heat for about 15 minutes, stirring frequently to ensure even cooking and to prevent sticking or burning.
  4. Add Cheese: Mix in the cubed Montasio cheese and continue cooking for a couple of minutes until the cheese begins to melt and combines evenly with the potatoes.
  5. First Side Browning: Spread the mixture evenly in the pan and cook on one side for 6-7 minutes until the bottom is golden brown, checking regularly by lifting edges with a spatula.
  6. Flip Frico: Carefully slide the frico onto a plate, invert the pan over the plate, and flip the frico back into the pan to cook the other side.
  7. Second Side Browning: Cook the other side for an additional 6 minutes until it is golden brown as well.
  8. Serve: Flip the finished frico onto a serving board or plate and serve hot.

Notes

  • Montasio cheese is recommended for its melting quality and mild flavor, but other semi-hard Italian cheeses can be substituted if unavailable.
  • Using red potatoes provides a firmer texture, but Yukon Gold can also be used for a creamier result.
